Jackson’s First Day of Preschool ~ Ms. Elizabeth’s Class

Jackson started back to preschool this morning.  He seemed pretty indifferent to the idea ever since we started talking about it a few days ago.  He even told me last night that he didn’t want to go to school.  He actually seemed pretty excited this morning though.  He helped pick out his shirt and got dressed with no stalling.  And when he spotted the red rooftop of the preschool in the distance, he pointed and said, “My school!  My school!”  He went right into his classroom and started checking it all out.  I left without much of anything – he really wasn’t even interested in giving me goodbye loves.  C’mon, Jackson -- I’d expect that in high school, but you’re only 3 you know! 
Here’s to a great second year of preschool!  I can’t wait to hear about all of your new friends!

The Purple Basket

Jackson pooped on the potty!  Jackson pooped on the potty!  Woo Hoo!!!!  Maybe I won't have the first kid in college wearing pull-ups!  That dang purple basket has been sitting on top of the refrigerator for over a month now.  And he knew he'd get to pick from one of the toys inside, once he pooped on the potty.  It didn't seem to faze him.  Sweet CAT backhoe.  Matchbox airplane.  Helicopter.  Who needs it?

I knew he was getting more and more interested b/c last week he would ask to go sit on the potty.  No results, but I felt that was progress.  Well, tonight he asked to see the purple basket.  Sean pulled it down and he started looking at all the toys inside.  Then he said, 'I'm gonna get somein in da purple basket!"  And lo and behold if he didn't hop right up on the big potty and take a crap!  I'm telling you what, I've never been so excited about poop in my life!

And he knew exactly what he wanted first -- a CAT trackhoe!


Menu Plan Monday ~ 8/30

This is going to be another crazy week for us.  Coming back from the beach today, first day of preschool tomorrow(!), and more fun this weekend.  This week's menu is going to be pretty simple, but I'm really excited about making the Shrimp Etoufee.  We had a pot-luck lunch at work last week and my favorite dish was a shrimp stew over rice.  It was soooo good!  Everyone was raving over it.   The technician who brought it was kind enough to share the recipe with all of us.  It seems pretty easy, so we'll see.  Here's what else we'll be eatin' this week...

Monday - Coming home from the beach.  I'd love to grill steaks if we get home early enough, but if not it'll be something packaged from the freezer.  After all the junk we ate at the beach this weekend, I probably should ease my body back into nutritious foods.  **The verdict: Fish sticks and corn on the cob.  Those are two of Jackson's favorites and since he has a big day tomorrow, I wanted to be sure he ate a good dinner.

Did anyone else make a menu plan last week?  Or do you plan to make one this week?  I've realized, even more now that Kate is eating more of what we all eat, I need to make sure these guys are getting good nutritional meals.  It's just such a challenge.  I need ideas for EASY and NUTRITIONAL family friendly dinners.  Anyone?  Anyone?  I'm sure there's a blog out there somewhere, that could give me some suggestions.

Menu Plan Results ~ 8/28

The menu plan worked out pretty well for us this week, although I do feel like I cheated a bit since I only actually prepared 2 meals.  They both made enough for two night's dinners, so all we had to do was re-heat on the days I worked.  

As for the reviews, I'd say they were mixed.  Neither Jackson nor Kate were huge fans of the ravioli.  Kate like the meat sauce a lot, but not so much the pasta.  I think we'll just stick to regular pasta -- spaghetti or ziti -- in the future.  We had enough okra ready in the garden to cut up and saute as a side.  Jackson isn't a fan (yet), but  that doesn't stop me from making/offering them.  





















The tuna cakes turned out great.  I ended up using a recipe I found online in lieu of one I already had.  The one online included bread crumbs and more veggies and since we already had everything on hand, I figured we'd try something different.  While they did taste very good, a recipe that requires lots of prep work, like chopping up the veggies/garlic etc.,isn't exactly an ideal recipe when you have two little shorties pulling at you the whole time.  Next time I think I'd rather go for an easier tuna cake recipe or plan the day better and start the prep work during naps.

Our side dishes came mostly from our last week's share of The Produce Box.  We boiled up the red potatoes with some onions and hot sauce.  Then I sliced up a couple of romas and topped them with shredded mozzarella, basil, oil/vinegar.  We just popped them into the oven during the last few minutes on the tuna cakes, just long enough to melt the cheese and warm the mater.  A southern delicacy with a little urban jazz!  

As for the rosemary aioli, it was very yummy, but not quite perfect.  It had too much of the balsamic bite and wasn't quite as sweet as I remembered.  Next time, rather than cutting the balsamic, I'm going to add a sprinkle of sugar.  I've heard that is a common secret ingredient of great southern cooks!  ;-)

To nap or not to nap.

That is apparently the question Kate is asking herself these days, b/c over the past couple of weeks, her naps seem to have fallen to the bottom of her to-do list.  I know that Jackson and Kate are going to be completely different and all, but sleep isn't one of those things that I necessarily want to be different.  Jackson is a fantastic sleeper and has been all along.  Sleeping 11 hours or so at night and taking a 2 hour nap mid-day ain't too bad for a 3 year old!  I realize that could change in an instant, so I say this knocking on wood.  Today, Kate's afternoon nap was barely 30 minutes, with only an hour long morning nap.  She still goes to bed early, but that's also because she can't make it any longer.  Maybe she's ready to drop the morning nap.  It seems early (compared to Jackson).  Then again, she's already proven she's gonna be different!  ;-)

Menu Plan Monday ~ 8/23

I mentioned the other day, that Ashely and I are going to start meal planning and sharing our menus for the week on our blogs.  Today is officially our first Menu Plan Monday.  And of course, we were out of town this weekend and I haven't had much of a chance to get my thoughts/grocery list/shopping done.  So...for my first meal plan, I'm going to dig through the freezer and pantry and come up with some dinner ideas based off what we have on hand + last week's grocery shopping.

Monday: Baked Cheese Ravioli and Meat Sauce
Tuesday: Finish up the Ravioli
Wednesday: Tuna Cakes w/ Rosemary Aioli Sauce*
Thursday: Bertolli Chicken Parm and Penne **
Fri/Sat/Sun: @ the Beach

*Don't get all excited thinking I'm gonna be whipping up gourmet dishes often.  We had some rosemary aioli sauce at a wedding last weekend and it was oh so amazing.  I found a recipe online and picked up the ingredients we didn't already have last week -- I'm just excited to try it out and see if hold's a candle to that of the Angus Barn.

** See?  Night four of my meal plan and I'm already going w/ a frozen, pre-packaged meal.  We both work on Thursday and will be packing for the beach, so I need easy-peasy!

Wow!  That actually feels good.  It's Monday morning and I have one less thing to think about every afternoon this week!  I've already taken the ground beef out of the freezer to thaw and everything. Woo Hoo!

Anybody else want to get their meal planning knocked out for the week?  I've already talked to Amy about playing along.  It's amazing what a little accountability can do for motivation!  I'm thinking the next challenge/commitment needs to be a little P90X action!  Ashely is workin' on her fitness w/ a trainer.  About all the exercise I get these days is with my fingers on a keyboard and wrangling a raging bull child for a diaper change.  I'm not really interested in weight loss, but I would certainly like to be more fit.  Who wouldn't?  Eating well and taking care of your body are about the best you can do for a healthy lifestyle!

A Few Things

  • Jackson has apparently taken a liking to football.  The other day he yelled, "Tackle!" and ran smack into Kate, knocking her to the floor.  Today he walked by her, gave her a shoulder bump, again knocking her to the floor.  
  • Kate has taken her 'into everything' stage to a whole new level.  Today I was getting Jackson a treat from the 'red basket' after he went pee-pee on the froggy potty.  When I turned around, Kate had one hand in her mouth and the other hand in the froggy potty.  And no, I had not dumped it yet.  GROSS!
  • Jackson already knows how to play the cards.  When he wants something that he knows I may not agree to, he'll start the conversation with 'Mommy, I love you!'  I love you, too Jackson!  'My have  some candy?'
  • Botox in 12 year olds and 9 year olds who are getting waxed.  Seriously!?!  What in the world are kids going to be doing in ten years when Kate is entering the infamous tween years?
  • Ashely and I are going to start meal planning and using our blogs to hold us accountable.  I've wanted to do this for some time now, but just can't seem to make it a priority.  And I hate that every night at 5:30, I'm scrambling to come up with a dinner idea. Our plan is to start posting our menus next Monday.  If anybody wants to do this with us, feel free to find some way to document your plan...you could email it, facebook it, or just leave a comment on my menu post.  I know this is just something else I'm going to have to do, but we've gotta eat, so....it just kinda makes sense.  I mean, I do have Bob the Bull in the freezer and all!

Walkin’ for your love

Somebody’s got some sweet new moves and is pretty proud of herself.  I mentioned the other day that she was standing up on her own.  Well, that was the end of July.  During the first two weeks of August, she seemed to be practicing – only taking a few steps here and there.  I counted 7 at one point and it seemed like that was her max for a few days.  So I figured she would be just like Jackson – ‘just starting to walk’ for a couple of months.  Not so much.  She took those two weeks to practice and since then it’s been on!  She can go from here to there and yonder and back.  She may fall a few times on the way, but she gets herself right back up and starts walking again.  So…  I guess I’m gonna have to make it official – Kate is walking!!!  At 10 1/2 months.  Doh!  We’re definitely in for it now!!
These pictures don’t have anything to do w/ her walking.  I just love them so.  That little tongue sticking out in all of them makes me laugh.  I’m pretty sure that’s her ‘Look what I can do!’ face.

While she looks very happy here, I’m pretty sure she’s got some more toofer issues going on.  She was Miss Whiny McWhinerpants ALL DAY today.  It was seriously like she was a baby baby again and all she wanted to do was be held.  Oh girl, you’ve got to get yourself together.  You are for real drama ALREADY!!  You are not even the Big One yet.  I’ve pretty much resolved that she and Jackson are going to be two totally different animals.

Beach Bums

When all were down at the beach the last weekend of August.  Kate had an especially good time!  She could not get enough of the water.  She was is really starting to get up on two feet more often.  This was her favorite place to be the entire weekend…  Fingers clinched around yours, walking just as fast as she can.

When Mamma and I walked down to the water with her she was fearless!  I think this one will always be a favorite.

Look at her now!  Standing there all by herself.  This was one of the first times I watched her go from sitting to standing, without having to pull herself up.  Oh boy, here we go!!

Now she wasn’t quite as excited about the boat experience.  Maybe it was the fat life jacket strapped to her, or maybe it was the fact that we were speeding across a big body of water.  Either way, she really wasn’t too sure what to think of it.

There she is -- she’s back!  Get her outta the boat, peel off the life jacket and show her to the water.  I’d say she’s pretty happy now.  Wouldn’t you agree??

After a fun day out on the water, I somehow convinced Jackson to walk down to the beach with me.  Even though he normally hates the sight of the camera, I was honest and told him I wanted to take a few pictures.  Surprisingly, he was a very, very good little model!

We got down there right as the sun was beginning to set – I think photographers will tell you that it’s the best time to photograph.  I must agree.  I mean is this kid a stud or what?  Totally looks like a page from a summer catalog!

Once I knew we had lots of great ones to share, we just had a little fun.  Jackson has loved chasing the little sandpipers on the beach since he first learned to walk.  It is amazing to watch how far he’ll run after them.  And how fast he is!  He had me out of breath, trying to keep up with him!

Then he found a big hole that was perfect for jumping.  I think I may have already mentioned that he’s fascinated by jumping.  This actually turned out to be one of my favorite shots.  It totally captures him and all the magic of a 3 year old.

Ryley and Emma got back from a birthday party while we were out there and happened to have their tye dyed garb with them, too.  By the time they got changed and onto the beach, Jackson was over taking pictures, so I really didn’t get much of the three of them.  Besides, they would have been one cousin short anyway, since Kate was already sleeping.

The lovely Ryley always makes a great model though!  I may not have captured her face in the twirling shot, but I still love it.  It so fun, so her!

And Emma, yep that’s Emma.  Just like I captured Jackson and Ryley’s personalities, I totally got the perfect shot of Emma.  She is such a little nut!  Ryley gives us the angelic pose and playful twirl and Emma gives us this…  Amy and I both were just cracking up at her moves out there.

She may be a nut, but she’s still a sweet little nut.  I love her hands in this picture.  It’s like she’s anticipating as they come closer.

After our fun photo shoot on the beach, we went back up where the boys were grilling.  While they finished up, Ryley, Jackson and Emma played a little football.  This picture makes me laugh every time I look at it.  I’m pretty sure he just blew the tackle and is going in for the score…having lost one flip-flop and the other stuck between toes 3 and 4.  That’s my boy!

Dear Jackson,

A month ago, you turned 3.  Over the past few weeks I’ve been thinking about writing this letter to you.  I think I’ve reminisced in mind more lately than I ever have.   Just looking back at this past year amazes me – how much you changed, all you’ve done.  You started preschool in the fall.  Your first time spending so much time with anyone other than family.  Going to preschool was the best decision we’ve made for you.  You had the best time and I loved hearing all your stories about your friends.  You’ve become so much more social.  You’re friendly and polite all the time.  When we’re out grocery shopping or at Target I always hear a compliment on how well you behave.  Don’t get me wrong now, you’re still a three year old.  It seems that lately, you’re very interested in testing the limits – just to see if you can win the battle.  Sometimes I can’t help but laugh at you when you get all worked up.  You just get so pitiful that it’s cute! 
You are all boy when it comes to playing – give you a truck and some sand and you are set.  You love helping around the house…cooking with me, feeding/watering Maggie, working on the building w/ Daddy and Papa.  Anything we’re doing, you’re there to help.  You see action in the kitchen and run to get your stool so you can see.  You love singing and dancing.  Watching you dance always makes my day.  You’ve got some pretty sweet moves.  You’ll get that arm up and stand on your toes, dancing around in a circle.  So darn cute.  Yeah, I have no idea where you got that passion from.  As a matter of fact, you apparently agree that I can’t sing b/c when I try and sing along with you, you’ll say, No Mommy. Don’t singWhy? I ask.  Because that’s how God made it.  Understood.  It’s funny, that line, b/c I started using it with you when you would ask a round of never-ending whys.  And it worked – until you started using it on me.  Why don’t you want to poopy on the potty, Jackson?  Because that’s how God made it. Really?  I need to verify this with the Big Guy.

Riding in the car with you is always fun.  You are so observant and don’t miss a thing.  We’ll pass by a tractor way off the road and you’ll point it out.  Same w/ construction equipment – and you know the names of pretty much everything.  The other day was the first time you’d pointed out the clouds and how the shapes looked like different things.  If I think you’re not listening, think again.  When I recently got a little impatient with the construction traffic, I let out an aggravated, C’mon dude.  Let’s go!  You’ve now been repeating that.  The other day while riding with your Daddy and stopped at the red light, you were apparently impatient, too. 

You are such a sweet big brother to Kate…most of the time.  Watching you take her for a ride on your truck is the best.  She loves it!  You definitely get a little frustrated with her when she messes w/ your toys, especially now that’s she’s so into everything.  I can see how much you love her though and you already seem protective of her.  The nickname you gave her a couple of weeks ago is my favorite.  Icky!  I hope it sticks.  I love it!

You really are the sweetest little boy a Mommy and Daddy could ask for.  You’ll out of the blue say, “Mommy. I love you!” Oh how that’ll melt my heart.  It makes all the craziness of the day go away, even if just for a moment.  You love giving kisses and snuggling in the morning.  You’ll say, “Give me 5 kisses!”  We’ll count to five, then you’ll say, “One more!”  You could go on and on forever. 

There are so many things about you and this age I want to remember.  I know I want to be able to think of everything, but here are few of my favorites.

1. Milk.  In a Mickey Mouse cup.  First thing in the morning.  Critical to the start of your day.

2. Tag you’re it.  I have no idea where you became so fascinated with this, but if asked on any given day, that’s what you’ll say you want to do. 

3. Potty training.  You’re 3 now and we’re far from ‘trained’.  You told me the other day that you were gonna poop on the potty when Mamma came back.  We’ll see if you keep your word on Tuesday.

4. Blanky and Lovey.  Actually two lovies.  You have a bed full of ‘friends’ but Blanky, Lovey, and now two Loveys are always nearby.  We’ve always had two Lovies, but you didn’t know about there were two until a couple of months ago.  One was stashed away in case of emergency or just so the other could get washed periodically.  Kyleigh, the neighbor across the street, discovered Lovey #2 and you haven’t parted ways since.  This one actually has a smaller nose – thread mishap – so you call him Little Nose Lovey.  If you ever share one with me, I always get Little Nose.

5. Gator.  It can be 7 in the morning or 7 at night and you’ll ask, “MayI ride my gator?”  Papa has even added a ‘hitch’ to it, so you can hook it up to your wagon (‘trailer’).  You’d ride all day long if we’d let you.  Watching how well you can drive is AMAZING!  You can even park it in the garage, with my car in there, without hitting a thing.  Seriously?!  And reverse, you’ve had that mastered for a long time now!  Seeing you take Kate on a ride is so sweet – is the perfect example of how great a big brother you are!  She thinks you are so much fun!

6. Jumping.  Not sure if it’s just a boy thing or what, but you want to jump off of everything.  The cushions on the couch haven’t stood a chance for over a year now.  It’s like you can’t stand it when they’re in place.  You must move them to the floor immediately.  They can be jumped on, become a boat, a train.  You name it, the couch cushions can become it!

I know there’s more and over the next couple of weeks, I may add to the list.  Most of all, right now what I want to remember and what I want you to know that you are an absolute joy in our lives.  I can’t imagine what life was like without you.  You’ve brought so much joy and happiness and laughter to our lives.  I am so excited to watch you grow up.  But before you grow up too much … give me 5 kisses!  :-)
